Description

A creamy, tangy whipped feta topped with sweet roasted strawberries and a hint of honey. Perfect as an appetizer or a light snack, served with crusty bread or crackers.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon honey
  • 1/2 teaspoon balsamic vinegar
  • 1 tablespoon olive oil
  • Fresh basil leaves for garnish
  • Crackers or sliced baguette for serving


Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, toss the strawberries with honey, balsamic vinegar, and olive oil. Spread them in a single layer on the prepared baking sheet.
  3. Roast the strawberries for 15-20 minutes, until they are soft and slightly caramelized. Remove from the oven and let cool slightly.
  4. In a food processor, combine the feta cheese, cream cheese, Greek yogurt, lemon juice, and lemon zest. Process until smooth and creamy, scraping down the sides as needed.
  5. Transfer the whipped feta to a serving bowl or platter. Use a spatula to create swirls on top.
  6. Spoon the roasted strawberries and their juices over the whipped feta. Garnish with fresh basil leaves.
  7. Serve immediately with crackers or sliced baguette.

Notes

You can customize the seasonings to taste. For a sweeter version, add more honey or a drizzle of maple syrup.
