Description
A creamy, tangy whipped feta topped with sweet roasted strawberries and a hint of honey. Perfect as an appetizer or a light snack, served with crusty bread or crackers.
Ingredients
- 8 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 1/4 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 cups fresh strawberries, hulled and halved
- 1 tablespoon honey
- 1/2 teaspoon balsamic vinegar
- 1 tablespoon olive oil
- Fresh basil leaves for garnish
- Crackers or sliced baguette for serving
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, toss the strawberries with honey, balsamic vinegar, and olive oil. Spread them in a single layer on the prepared baking sheet.
- Roast the strawberries for 15-20 minutes, until they are soft and slightly caramelized. Remove from the oven and let cool slightly.
- In a food processor, combine the feta cheese, cream cheese, Greek yogurt, lemon juice, and lemon zest. Process until smooth and creamy, scraping down the sides as needed.
- Transfer the whipped feta to a serving bowl or platter. Use a spatula to create swirls on top.
- Spoon the roasted strawberries and their juices over the whipped feta. Garnish with fresh basil leaves.
- Serve immediately with crackers or sliced baguette.
Notes
You can customize the seasonings to taste. For a sweeter version, add more honey or a drizzle of maple syrup.
