Description

A creamy, tangy whipped feta dip topped with sweet roasted strawberries, perfect as an appetizer or snack.


Ingredients

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 pound fresh strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C). Toss strawberries with balsamic vinegar, thyme, salt, and pepper on a baking sheet. Roast for 15-20 minutes until softened.
  2. In a food processor, combine feta, cream cheese, olive oil, and honey. Blend until smooth and creamy, about 2-3 minutes.
  3. Spread whipped feta on a serving plate, top with roasted strawberries, and drizzle with extra honey if desired. Serve with crackers or bread.
