A refreshing summer salad combining sweet watermelon, juicy peaches, tart blackberries, and creamy burrata, all elevated with a tangy balsamic honey drizzle.
Ingredients
- 4 cups watermelon, cut into 1-inch cubes
- 3 ripe peaches, pitted and cut into 1-inch cubes
- 1 cup fresh blackberries
- 8 oz burrata cheese, torn into bite-sized pieces
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh mint leaves, thinly sliced (for garnish)
Instructions
- In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper until well combined. Set aside.
- In a large serving bowl, gently combine watermelon cubes, peach cubes, blackberries, and torn burrata pieces.
- Drizzle the balsamic honey mixture over the fruit and burrata, tossing gently to coat without breaking the burrata.
- Garnish with fresh mint leaves and serve immediately, or chill for 15 minutes before serving for a colder salad.
Notes
You can customize the seasonings to taste. For extra freshness, add a few basil leaves instead of mint, or a pinch of chili flakes for a spicy kick.
