Description

A refreshing summer salad combining sweet watermelon, juicy peaches, tart blackberries, and creamy burrata, all elevated with a tangy balsamic honey drizzle.


Ingredients

  • 4 cups watermelon, cut into 1-inch cubes
  • 3 ripe peaches, pitted and cut into 1-inch cubes
  • 1 cup fresh blackberries
  • 8 oz burrata cheese, torn into bite-sized pieces
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh mint leaves, thinly sliced (for garnish)


Instructions

  1. In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper until well combined. Set aside.
  2. In a large serving bowl, gently combine watermelon cubes, peach cubes, blackberries, and torn burrata pieces.
  3. Drizzle the balsamic honey mixture over the fruit and burrata, tossing gently to coat without breaking the burrata.
  4. Garnish with fresh mint leaves and serve immediately, or chill for 15 minutes before serving for a colder salad.

Notes

You can customize the seasonings to taste. For extra freshness, add a few basil leaves instead of mint, or a pinch of chili flakes for a spicy kick.
