A colorful and elegant salad featuring sweet roasted beets and carrots paired with creamy burrata cheese, drizzled with a tangy balsamic glaze.
Ingredients
- 3 medium beets, peeled and cubed
- 4 large carrots, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces burrata cheese
- 2 cups mixed salad greens
- 1/4 cup balsamic glaze
- 1/4 cup toasted walnuts
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss cubed beets and sliced carrots with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and slightly caramelized. Let cool slightly.
- Arrange mixed greens on a serving platter. Top with roasted vegetables.
- Tear burrata cheese into pieces and arrange over the vegetables.
- Drizzle with balsamic glaze, sprinkle with toasted walnuts, and garnish with fresh basil. Serve immediately.
