Description
A creamy, no-bake cheesecake with a buttery graham cracker crust, infused with vanilla and topped with a fresh berry medley.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 tbsp honey (optional, for berry topping)
Instructions
- Mix graham cracker crumbs, melted butter, and granulated sugar in a bowl until combined. Press firmly into the bottom of a 9-inch springform pan and refrigerate for 30 minutes.
- In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the cheesecake filling evenly over the chilled crust. Cover and refrigerate for at least 4 hours or overnight until set.
- Before serving, arrange mixed fresh berries on top. Drizzle with honey if desired. Slice and serve chilled.
