Description

A hearty and flavorful rice bowl featuring juicy grilled chicken, creamy avocado, and a zesty lime-cilantro dressing. Perfect for a quick and satisfying meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain white rice
  • 1 3/4 cups water
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels (fresh or thawed frozen)
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Optional: hot sauce or sliced jalapeños


Instructions

  1. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the mixture all over the chicken breasts.
  2. Preheat a grill or grill pan over medium-high heat. Lightly oil the grates. Grill chicken for 6-8 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
  3. While chicken cooks, rinse rice in a fine-mesh strainer. In a medium saucepan, bring water to boil. Add rice, reduce heat to low, cover, and simmer for 15-18 minutes until tender. Fluff with a fork.
  4. In a small bowl, whisk together Greek yogurt, lime juice, olive oil, minced garlic, and chopped cilantro to make the dressing.
  5. Divide cooked rice among serving bowls. Top with sliced chicken, avocado, cherry tomatoes, corn, and black beans. Drizzle with dressing. Garnish with extra cilantro and hot sauce if desired.

Notes

You can customize the seasonings to taste. For extra heat, add sliced jalapeños or your favorite hot sauce.
