Ingredients
- 1 pound cheese ravioli (fresh or frozen)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, roughly chopped
- 1/2 cup sun-dried tomatoes (oil-packed, sliced)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Bring a large pot of salted water to a boil and cook ravioli according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Add spinach and sun-dried tomatoes to the skillet, cooking until spinach wilts, about 2-3 minutes.
- Gently fold in cooked ravioli, tossing to coat evenly in the sauce. Season with salt, pepper, and red pepper flakes if using.
- Serve immediately, garnished with fresh basil.
