Description

Soft, buttery cookies filled with a zesty lemon and creamy coconut filling, offering a tropical twist on classic sandwich cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream butter and granulated sugar until fluffy. Mix in flour, salt, vanilla, and shredded coconut to form a dough.
  3. Roll dough into 1-inch balls, place on baking sheets, and flatten slightly with a fork. Bake for 10-12 minutes until edges are golden. Cool completely.
  4. For the filling, beat cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
  5. Spread filling on the flat side of half the cookies, then top with remaining cookies to form sandwiches.
