Ingredients
- 2 cups cherry tomatoes, diced
- 1/2 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 oz cream cheese, softened
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Baguette slices, toasted, for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Let sit for 10 minutes.
- In a separate bowl, mix cream cheese, ricotta, and half of the mozzarella until well combined.
- Spread the cheese mixture evenly in a baking dish or cast iron skillet.
- Top with the tomato mixture and sprinkle with the remaining mozzarella and Parmesan cheese.
- Bake for 20-25 minutes, until hot and bubbly.
- Serve warm with toasted baguette slices.
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of red pepper flakes to the tomato mixture.
