Description
Crispy baked sweet potato wedges topped with a creamy whipped feta, fresh herbs, and a sweet-tangy walnut honey drizzle.
Ingredients
- 2 large sweet potatoes, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 200g feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup walnuts, chopped
- 3 tablespoons honey
Instructions
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Spread wedges in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- While wedges bake, prepare whipped feta: in a food processor, combine feta, Greek yogurt, and lemon juice. Blend until smooth and creamy.
- In a small skillet over medium heat, toast walnuts for 2-3 minutes until fragrant. Add honey and stir until combined and warm. Remove from heat.
- To serve, spread whipped feta on a platter. Arrange sweet potato wedges on top. Sprinkle with fresh parsley and mint, then drizzle with walnut honey.
- Serve immediately as an appetizer or side dish.
