Description

Crispy baked sweet potato wedges topped with a creamy whipped feta, fresh herbs, and a sweet-tangy walnut honey drizzle.


Ingredients

  • 2 large sweet potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 200g feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup walnuts, chopped
  • 3 tablespoons honey


Instructions

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  3. Spread wedges in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  4. While wedges bake, prepare whipped feta: in a food processor, combine feta, Greek yogurt, and lemon juice. Blend until smooth and creamy.
  5. In a small skillet over medium heat, toast walnuts for 2-3 minutes until fragrant. Add honey and stir until combined and warm. Remove from heat.
  6. To serve, spread whipped feta on a platter. Arrange sweet potato wedges on top. Sprinkle with fresh parsley and mint, then drizzle with walnut honey.
  7. Serve immediately as an appetizer or side dish.
