Ingredients
- 2 large sweet potatoes (about 1.5 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 2 tablespoons milk
- 1 tablespoon lemon juice
- 2 tablespoons honey
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut sweet potatoes into 1-inch thick rounds. Place on baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Bake for 25-30 minutes until tender.
- Remove from oven and gently smash each round with the bottom of a glass or fork to flatten. Drizzle with remaining olive oil. Return to oven and bake for another 15-20 minutes until crispy and golden.
- While potatoes are baking, make feta cream: In a small bowl, mash feta with yogurt, milk, and lemon juice until smooth and creamy. Season with a pinch of pepper.
