Crispy sweet potato fritters paired with a creamy, spicy spinach feta dip and drizzled with sticky hot honey for a perfect balance of sweet and heat.
Ingredients
- 2 large sweet potatoes, peeled and grated
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup vegetable oil for frying
- 2 cups fresh spinach
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes
- 1/4 cup hot honey
Instructions
- Place grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture. In a large bowl, combine sweet potatoes, flour, eggs, salt, pepper, and garlic powder. Mix well.
- Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the sweet potato mixture into the hot oil and flatten slightly. Cook for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
- For the dip, wilt spinach in a microwave or skillet. Squeeze out excess water and chop finely. In a bowl, combine spinach, feta, Greek yogurt, lemon juice, and red pepper flakes. Mix until smooth.
- Drizzle hot honey over fritters and serve with the spicy spinach feta dip.
Notes
You can customize the seasonings to taste. For extra crunch, add a tablespoon of cornmeal to the fritter batter. If you prefer less heat, reduce the red pepper flakes in the dip.
