Description

Crispy sweet potato fritters paired with a creamy, spicy spinach feta dip and drizzled with sticky hot honey for a perfect balance of sweet and heat.


Ingredients

  • 2 large sweet potatoes, peeled and grated
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup vegetable oil for frying
  • 2 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon red pepper flakes
  • 1/4 cup hot honey


Instructions

  1. Place grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture. In a large bowl, combine sweet potatoes, flour, eggs, salt, pepper, and garlic powder. Mix well.
  2. Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the sweet potato mixture into the hot oil and flatten slightly. Cook for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
  3. For the dip, wilt spinach in a microwave or skillet. Squeeze out excess water and chop finely. In a bowl, combine spinach, feta, Greek yogurt, lemon juice, and red pepper flakes. Mix until smooth.
  4. Drizzle hot honey over fritters and serve with the spicy spinach feta dip.

Notes

You can customize the seasonings to taste. For extra crunch, add a tablespoon of cornmeal to the fritter batter. If you prefer less heat, reduce the red pepper flakes in the dip.
