Description

These sweet potato rounds are a delightful appetizer or side dish, featuring roasted sweet potato slices topped with a creamy mixture of cream cheese and tangy dried cranberries, perfect for holiday gatherings or any special occasion.


Ingredients

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces cream cheese, softened
  • 1/4 cup dried cranberries, chopped
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange sweet potato rounds in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden brown and tender.
  4. While sweet potatoes are baking, in a small bowl, combine softened cream cheese, chopped dried cranberries, and honey. Mix until smooth and well combined.
  5. Once sweet potato rounds are done, let them cool for 5 minutes. Top each round with a dollop of the cranberry cream cheese mixture.
  6. Sprinkle with fresh thyme leaves if desired. Serve warm or at room temperature.

Notes

You can customize the seasonings to taste. For a savory twist, add a pinch of smoked paprika or cayenne pepper to the sweet potatoes before roasting.
