Description

These sweet and savory sweet potato rounds are the perfect appetizer for any gathering. Roasted sweet potato slices are topped with melted Brie, tart cranberry sauce, and crunchy toasted pecans, then finished with a spicy hot honey drizzle. The combination of flavors and textures is irresistible!

Ingredients

  • 2 large sweet potatoes, washed and cut into 1/4-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 8 ounces Brie cheese, cut into small pieces
  • 1/2 cup whole berry cranberry sauce
  • 1/2 cup pecan halves, toasted and roughly chopped
  • 1/4 cup honey
  • 1/4 teaspoon red pepper flakes (or more to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the prepared baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. Remove from oven and top each sweet potato round with a piece of Brie. Return to oven for 3-5 minutes, until Brie is melted.
  5. While the sweet potatoes are roasting, make the hot honey: In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes. Set aside.
  6. To assemble, top each sweet potato round with a small spoonful of cranberry sauce and a sprinkle of toasted pecans. Drizzle with hot honey.
  7. Serve warm and enjoy!

Notes

You can customize the seasonings to taste. For a milder version, reduce or omit the red pepper flakes. These are best served fresh but can be assembled ahead and reheated gently.
