Ingredients
- 2 large sweet potatoes, peeled and grated (about 4 cups)
- 2 medium apples (such as Honeycrisp), peeled and grated (about 1 cup)
- 1 small onion, grated
- 2 large eggs, lightly beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup olive oil or vegetable oil, for drizzling
- 8 ounces brie cheese, rind removed, at room temperature
- 1/4 cup heavy cream
- 1/2 cup pecan halves
- 1/4 cup honey
- 1/4 teaspoon red pepper flakes (or to taste)
- Fresh thyme leaves, for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish with oil.
- In a large bowl, combine grated sweet potatoes, apples, and onion. Squeeze out excess moisture using a clean kitchen towel.
- Add eggs, flour, salt, pepper, cinnamon, and nutmeg to the vegetable mixture. Mix until evenly combined.
- Transfer mixture to the prepared baking dish, spreading evenly. Drizzle with olive oil.
- Bake for 25-30 minutes, until the top is golden and crispy and the mixture is set.
- While the fritter bake is in the oven, prepare the whipped brie: In a small food processor or with a hand mixer, whip the brie and heavy cream until smooth and fluffy. Set aside.
- For the hot honey pecans: In a small skillet over medium heat, toast pecans for 2-3 minutes until fragrant. Add honey and red pepper flakes, stirring to coat. Cook for 1 minute, then remove from heat.
- Once the fritter bake is done, remove from oven and let cool for 5 minutes.
- Spread whipped brie over the warm fritter bake. Sprinkle with hot honey pecans and garnish with fresh thyme if desired.
- Serve warm and enjoy!
