Description
A moist, dense quick bread studded with toasted pecans and a sweet brown sugar glaze, inspired by Southern dessert traditions.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup chopped pecans, toasted
- For the glaze: 1/4 cup brown sugar, 2 tablespoons butter, 2 tablespoons milk, 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Whisk together flour, baking soda, and salt in a bowl.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla.
- Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour. Fold in chopped pecans.
- Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
- For the glaze, melt brown sugar and butter in a small saucepan over medium heat. Whisk in milk and simmer for 2 minutes. Remove from heat and whisk in powdered sugar until smooth. Drizzle over warm bread. Let set before slicing.
Notes
You can customize the seasonings to taste. Try adding a pinch of cinnamon or nutmeg for extra warmth.
