Description

A gourmet twist on classic grilled cheese, featuring creamy ricotta, tangy sun-dried tomatoes, and fresh spinach between buttery, golden-toasted bread.


Ingredients

  • 8 slices sourdough bread
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter (softened)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste


Instructions

  1. In a bowl, mix ricotta cheese, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
  2. Spread the ricotta mixture evenly on 4 slices of bread. Top each with a handful of spinach leaves and a layer of shredded mozzarella. Cover with the remaining bread slices.
  3. Butter the outer sides of each sandwich lightly with softened butter.
  4. Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and cheese is melted.
  5. Remove from heat, let cool slightly, then slice and serve warm.
