A gourmet twist on the classic grilled cheese, this sandwich combines creamy ricotta, salty sun-dried tomatoes, and fresh spinach for a flavorful, satisfying meal.
Ingredients
- 8 slices sourdough bread
- 4 tablespoons butter, softened
- 1 cup ricotta cheese
- 1/2 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach leaves
- 1 1/2 cups shredded mozzarella cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Mix ricotta cheese, sun-dried tomatoes, garlic powder, salt, and pepper in a small bowl.
- Butter one side of each bread slice. Place half the slices butter side down on a flat surface.
- Spread the ricotta mixture evenly on the unbuttered side of those slices. Top with spinach leaves and mozzarella cheese.
- Cover with remaining bread slices, butter side up.
- Heat a skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, until golden brown and cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
