Description

A gourmet twist on the classic grilled cheese, this sandwich combines creamy ricotta, salty sun-dried tomatoes, and fresh spinach for a flavorful, satisfying meal.


Ingredients

  • 8 slices sourdough bread
  • 4 tablespoons butter, softened
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach leaves
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Mix ricotta cheese, sun-dried tomatoes, garlic powder, salt, and pepper in a small bowl.
  2. Butter one side of each bread slice. Place half the slices butter side down on a flat surface.
  3. Spread the ricotta mixture evenly on the unbuttered side of those slices. Top with spinach leaves and mozzarella cheese.
  4. Cover with remaining bread slices, butter side up.
  5. Heat a skillet or griddle over medium heat. Cook sandwiches for 3-4 minutes per side, until golden brown and cheese is melted.
  6. Remove from heat, let cool slightly, then slice and serve warm.
