Description

This gourmet grilled cheese combines creamy ricotta, savory sun-dried tomatoes, and fresh spinach, all melted between crispy golden bread with gooey mozzarella. It’s an elevated twist on the classic comfort food.


Ingredients

  • 8 slices sourdough bread
  • 4 tablespoons unsalted butter, softened
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
  • 2 cups fresh spinach leaves
  • 1 clove garlic, minced
  • 1 teaspoon olive oil
  • Salt and black pepper to taste


Instructions

  1. In a small skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper. Transfer to a bowl and let cool slightly.
  3. In another bowl, mix ricotta, mozzarella, sun-dried tomatoes, and the cooked spinach mixture.
  4. Spread butter on one side of each bread slice. Flip half the slices over and divide the cheese mixture evenly among them. Top with remaining bread slices, buttered side up.
  5. Heat a large skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown and cheese melts, about 3-4 minutes per side.
  6. Remove from skillet, let rest for 1 minute, then slice and serve warm.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or dried oregano to the cheese mixture.
