Description
This gourmet grilled cheese combines creamy ricotta, savory sun-dried tomatoes, and fresh spinach, all melted between crispy golden bread with gooey mozzarella. It’s an elevated twist on the classic comfort food.
Ingredients
- 8 slices sourdough bread
- 4 tablespoons unsalted butter, softened
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
- 2 cups fresh spinach leaves
- 1 clove garlic, minced
- 1 teaspoon olive oil
- Salt and black pepper to taste
Instructions
- In a small skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds until fragrant.
- Add spinach and cook until wilted, about 2 minutes. Season with salt and pepper. Transfer to a bowl and let cool slightly.
- In another bowl, mix ricotta, mozzarella, sun-dried tomatoes, and the cooked spinach mixture.
- Spread butter on one side of each bread slice. Flip half the slices over and divide the cheese mixture evenly among them. Top with remaining bread slices, buttered side up.
- Heat a large skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown and cheese melts, about 3-4 minutes per side.
- Remove from skillet, let rest for 1 minute, then slice and serve warm.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or dried oregano to the cheese mixture.
