Description

A gourmet twist on the classic grilled cheese, featuring creamy ricotta, savory sun-dried tomatoes, and fresh spinach between crispy, buttery bread.


Ingredients

  • 8 slices sourdough bread
  • 1/2 cup ricotta cheese
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach leaves
  • 2 cups shredded mozzarella cheese
  • 4 tablespoons unsalted butter, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste


Instructions

  1. In a small bowl, mix ricotta cheese with garlic powder, dried oregano, salt, and pepper until well combined.
  2. Lay out 4 slices of bread. Spread the ricotta mixture evenly on each slice, then top with sun-dried tomatoes and a handful of fresh spinach.
  3. Divide shredded mozzarella cheese equally among the 4 slices, placing it on top of the spinach.
  4. Top each with a remaining slice of bread. Spread the outside of each sandwich with softened butter.
  5. Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes per side, until golden brown and the cheese is melted.
  6. Remove from heat, slice in half, and serve immediately.

Notes

You can customize the seasonings to taste. For extra flavor, try adding a pinch of red pepper flakes or fresh basil.
