Description

A rich, herby olive oil dip infused with sun-dried tomatoes and garlic, perfect for crusty bread. This easy appetizer is bursting with Mediterranean flavors.


Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup sun-dried tomatoes (oil-packed), finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh parsley (for garnish)
  • 1 loaf crusty bread, sliced


Instructions

  1. In a small skillet, heat the olive oil over low heat.
  2. Add the chopped sun-dried tomatoes and minced garlic. Cook gently for 2-3 minutes until fragrant, but do not brown the garlic.
  3. Remove from heat and stir in oregano, basil, red pepper flakes, salt, and black pepper.
  4. Whisk in balsamic vinegar.
  5. Pour the mixture into a shallow serving bowl. Let it sit for at least 10 minutes to allow flavors to meld.
  6. Garnish with fresh parsley and serve warm or at room temperature with crusty bread slices.
