Description

A hearty and vibrant dish featuring roasted sweet potatoes stuffed with a savory mix of spinach, mushrooms, and feta, then drizzled with a creamy lemon tahini dressing and topped with roasted red peppers for a smoky sweetness. Perfect for a satisfying weeknight dinner.


Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil, divided
  • 1 cup diced roasted red peppers (from jar, drained)
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup crumbled feta cheese
  • For the lemon tahini dressing:
  • 1/4 cup tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced
  • Pinch of salt
  • Optional: fresh parsley for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes and prick with a fork. Rub with 1 tablespoon olive oil and place on a baking sheet. Roast for 45-50 minutes or until tender when pierced with a knife. Let cool slightly.
  2. While potatoes roast, heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Add mushrooms and cook until browned and liquid is released, about 5-7 minutes. Add garlic and cook for 1 minute more. Add spinach in handfuls, stirring until wilted. Season with oregano, smoked paprika, salt, and pepper. Remove from heat and stir in roasted red peppers and feta cheese.
  3. In a small bowl, whisk together tahini, lemon juice, water, olive oil, minced garlic, and salt until smooth. Adjust water to reach desired consistency.
  4. When sweet potatoes are cool enough to handle, cut a slit down the center of each and gently push ends to open. Fluff the insides with a fork. Divide the spinach-mushroom mixture evenly among the potatoes, stuffing generously.
  5. Drizzle each stuffed potato with lemon tahini dressing and garnish with fresh parsley if using. Serve warm.

Notes

You can customize the seasonings to taste. For a vegan version, omit the feta and use a dairy-free substitute.
