Description

Roasted sweet potatoes stuffed with a savory mix of sautéed mushrooms, spinach, and creamy avocado, topped with tangy feta cheese. A delicious and healthy vegetarian meal.

Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 8 ounces mushrooms, sliced
  • 3 cups fresh spinach
  • 1 avocado, sliced
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Optional: garlic powder, paprika

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-60 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, about 5 minutes.
  3. Add mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.
  4. Stir in spinach and cook until wilted. Season with salt, pepper, and optional garlic powder and paprika.
  5. Once sweet potatoes are cool enough to handle, slice them open lengthwise and fluff the inside with a fork.
  6. Stuff each sweet potato with the mushroom-spinach mixture, top with avocado slices and crumbled feta cheese.
  7. Serve immediately and enjoy!
