Description
A healthy and flavorful stuffed sweet potato loaded with sautéed spinach, mushrooms, creamy avocado, and tangy feta cheese.
Ingredients
- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 3 cups fresh spinach
- 1 ripe avocado, diced
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes and prick with a fork. Bake for 45-50 minutes until tender.
- While potatoes bake, heat 1 tablespoon olive oil in a skillet over medium heat. Add mushrooms and cook until golden, about 5-7 minutes. Season with salt and pepper.
- Add spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.
- Once potatoes are cool enough to handle, slice each lengthwise and fluff the insides with a fork.
- Divide the mushroom-spinach mixture among the potatoes. Top with diced avocado and crumbled feta.
- Drizzle with remaining olive oil and sprinkle with red pepper flakes if desired. Serve warm.
