Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 tablespoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, butter, granulated sugar, lemon zest, lemon juice, and salt until a dough forms.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth for the filling.
- Roll dough into small balls, flatten each, add a teaspoon of filling, and seal into stuffed cookies.
- Bake for 12-15 minutes until edges are lightly golden, then cool on a wire rack.
