Description

Soft, chewy strawberry cookies with a creamy cheesecake-style filling in the center—sweet, fruity, and perfect for parties.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, finely crushed
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and granulated sugar until fluffy. Beat in egg and vanilla.
  3. In another bowl, whisk flour, baking powder, salt, and crushed strawberries. Gradually mix into wet ingredients until dough forms.
  4. For filling, beat cream cheese, powdered sugar, and lemon zest until smooth. Chill for 10 minutes.
  5. Scoop cookie dough, flatten slightly, add a teaspoon of filling, and wrap dough around to seal. Place on baking sheets.
  6. Bake for 12-15 minutes until edges are lightly golden. Cool completely before serving.
