Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, finely crushed
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon lemon zest
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and granulated sugar until fluffy. Beat in egg and vanilla.
- In another bowl, whisk flour, baking powder, salt, and crushed strawberries. Gradually mix into wet ingredients until dough forms.
- For filling, beat cream cheese, powdered sugar, and lemon zest until smooth. Chill for 10 minutes.
- Scoop cookie dough, flatten slightly, add a teaspoon of filling, and wrap dough around to seal. Place on baking sheets.
- Bake for 12-15 minutes until edges are lightly golden. Cool completely before serving.
