Ingredients
- 1 lb flank steak
- 2 ears corn, husked
- 1 avocado, sliced
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: 1 jalapeño, diced
Instructions
- Preheat oven to 400°F. Roast corn on a baking sheet for 20 minutes, turning once, until lightly charred. Let cool, then cut kernels off the cob.
- Season flank steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook steak for 4-5 minutes per side for medium-rare. Let rest, then slice against the grain.
- In a small bowl, mix sour cream, cilantro, lime juice, garlic, and salt. Add diced jalapeño if desired.
- Assemble bowls: divide steak, avocado slices, and roasted corn among bowls. Drizzle with cilantro cream sauce.

You can customize the seasonings to taste. For extra heat, add more jalapeño or a pinch of cayenne to the cream sauce.
