Description

A hearty and flavorful bowl featuring seared steak, creamy avocado, sweet roasted corn, and a zesty cilantro cream sauce, perfect for a satisfying meal.


Ingredients

  • 1 lb flank steak
  • 2 ears corn, husked
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1 jalapeño, diced


Instructions

  1. Preheat oven to 400°F. Roast corn on a baking sheet for 20 minutes, turning once, until lightly charred. Let cool, then cut kernels off the cob.
  2. Season flank steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook steak for 4-5 minutes per side for medium-rare. Let rest, then slice against the grain.
  3. In a small bowl, mix sour cream, cilantro, lime juice, garlic, and salt. Add diced jalapeño if desired.
  4. Assemble bowls: divide steak, avocado slices, and roasted corn among bowls. Drizzle with cilantro cream sauce.

Notes

You can customize the seasonings to taste. For extra heat, add more jalapeño or a pinch of cayenne to the cream sauce.
