Description
A light and flavorful crustless quiche packed with fresh spinach, juicy tomatoes, and creamy feta cheese. Perfect for breakfast, brunch, or a quick weeknight dinner.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 5 ounces fresh spinach, roughly chopped
- 6 large eggs
- 1 cup milk (or heavy cream for richer texture)
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or a tart pan.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook for another minute.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, salt, pepper, and oregano until well combined.
- Stir in the cooked spinach mixture, crumbled feta, and half of the cherry tomatoes.
- Pour the mixture into the prepared dish. Scatter the remaining cherry tomatoes on top and sprinkle with Parmesan if using.
- Bake for 25-30 minutes, or until the center is set and the top is lightly golden. Let cool for 5 minutes before slicing and serving.
Notes
You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat or fresh herbs like dill or basil for extra freshness.
