Description

A light and flavorful crustless quiche packed with fresh spinach, juicy tomatoes, and creamy feta cheese. Perfect for breakfast, brunch, or a quick weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 6 large eggs
  • 1 cup milk (or heavy cream for richer texture)
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or a tart pan.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook for another minute.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and oregano until well combined.
  5. Stir in the cooked spinach mixture, crumbled feta, and half of the cherry tomatoes.
  6. Pour the mixture into the prepared dish. Scatter the remaining cherry tomatoes on top and sprinkle with Parmesan if using.
  7. Bake for 25-30 minutes, or until the center is set and the top is lightly golden. Let cool for 5 minutes before slicing and serving.

Notes

You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat or fresh herbs like dill or basil for extra freshness.
