Ingredients
- 6 large eggs
- 1/2 cup milk (any kind)
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 2 cups fresh spinach, roughly chopped
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or a tart pan with olive oil or non-stick spray.
- Heat the olive oil in a large skillet over medium heat. Add the spinach and cook for 2-3 minutes until wilted. Remove from heat and set aside to cool slightly.
- In a large bowl, whisk together the eggs, milk, heavy cream, salt, pepper, garlic powder, and oregano until well combined.
- Spread the cooked spinach evenly in the prepared pie dish. Arrange the halved tomatoes on top, then sprinkle the feta cheese over the vegetables.
- Pour the egg mixture over the filling, ensuring it covers all ingredients evenly. Gently shake the dish to distribute the egg mixture.
- Bake for 30-35 minutes, or until the quiche is set in the center and the top is lightly golden. Let it cool for 5-10 minutes before slicing and serving warm or at room temperature.
Notes
You can customize the seasonings to taste. Add fresh herbs like dill or basil for extra flavor. This quiche is also great for meal prep – store leftovers in the refrigerator for up to 3 days.
