Description
A hearty and healthy vegetarian main dish featuring roasted sweet potatoes stuffed with a creamy spinach-ricotta mixture and finished with a bright, herby drizzle.
Ingredients
- 4 medium sweet potatoes, scrubbed
- 2 tablespoons olive oil, divided
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 5 ounces fresh spinach, roughly chopped
- 1 cup whole milk ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- For the herb drizzle:
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh parsley leaves, finely chopped
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Pinch of red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork and rub with 1 tablespoon olive oil. Place on a baking sheet and roast for 45-50 minutes, or until tender. Let cool slightly.
- While potatoes roast, heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute. Add spinach in batches, cooking until wilted. Season with salt and pepper. Remove from heat and let cool slightly.
- In a large bowl, combine ricotta, Parmesan, nutmeg, and the cooked spinach mixture. Mix well. Taste and adjust seasoning.
- When potatoes are cool enough to handle, slice each in half lengthwise. Scoop out most of the flesh, leaving a thin layer inside the skins. Mash the scooped flesh and fold it into the ricotta-spinach mixture.
- Stuff the mixture back into the potato skins. Place stuffed potatoes back on the baking sheet and bake for 15-20 minutes, until heated through and tops are lightly golden.
- For the herb drizzle: In a small bowl, whisk together olive oil, parsley, chives, lemon juice, Dijon mustard, and red pepper flakes if using.
- Serve stuffed sweet potatoes warm, drizzled generously with the herb mixture.
