Roasted sweet potatoes stuffed with a creamy spinach and ricotta filling, finished with a fresh herb drizzle for a vibrant and satisfying meal.
Ingredients
- 4 medium sweet potatoes
- 2 tablespoons olive oil, divided
- 1 small onion, diced
- 3 cloves garlic, minced
- 5 ounces fresh spinach
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh chives, chopped
- 2 tablespoons lemon juice
- 1/4 cup extra virgin olive oil
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, rub with 1 tablespoon olive oil, and place on a baking sheet. Roast for 40-45 minutes until tender.
- While potatoes roast, heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly. Squeeze out excess moisture and chop finely.
- In a bowl, combine cooked spinach, ricotta, mozzarella, Parmesan, salt, pepper, and red pepper flakes if using. Mix well.
- When sweet potatoes are cool enough to handle, cut a slit lengthwise and carefully scoop out some flesh to create a pocket. Add the scooped flesh to the ricotta mixture and stir to combine.
- Stuff each sweet potato with the ricotta-spinach mixture, mounding slightly. Return to oven and bake for 10-15 minutes until filling is hot and cheese is melted.
- Meanwhile, make the herb drizzle: In a small bowl, combine parsley, basil, chives, lemon juice, and extra virgin olive oil. Whisk until well blended. Season with a pinch of salt and pepper.
- Drizzle herb mixture over the stuffed sweet potatoes just before serving.
Notes
You can customize the seasonings to taste. For extra protein, add cooked ground turkey or chickpeas to the filling.
