Description
A comforting, creamy pasta bake with spinach and ricotta cheese baked to golden perfection.
Ingredients
- 300g pasta (penne or rigatoni)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 250g fresh spinach
- 500g ricotta cheese
- 1 cup grated mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
- 1 cup tomato passata (optional)
- Fresh basil for garnish
Instructions
- Preheat oven to 180°C (350°F). Cook pasta according to package directions until al dente. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add garlic and cook for 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and chop roughly.
- In a mixing bowl, combine ricotta, half the mozzarella, Parmesan, beaten egg, salt, pepper, nutmeg, and the cooked spinach. Mix well.
- Add the cooked pasta to the ricotta mixture and stir to combine. If using, spread half the tomato passata on the bottom of a baking dish, then add the pasta mixture. Top with remaining mozzarella and more passata if desired.
- Bake for 20-25 minutes until golden and bubbling. Let rest for 5 minutes, garnish with fresh basil, and serve.
