Spinach & Ricotta Pasta Bake

Description

A comforting, creamy pasta bake with spinach and ricotta cheese baked to golden perfection.


Ingredients

  • 300g pasta (penne or rigatoni)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 250g fresh spinach
  • 500g ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 cup tomato passata (optional)
  • Fresh basil for garnish


Instructions

  1. Preheat oven to 180°C (350°F). Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and cook for 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and chop roughly.
  3. In a mixing bowl, combine ricotta, half the mozzarella, Parmesan, beaten egg, salt, pepper, nutmeg, and the cooked spinach. Mix well.
  4. Add the cooked pasta to the ricotta mixture and stir to combine. If using, spread half the tomato passata on the bottom of a baking dish, then add the pasta mixture. Top with remaining mozzarella and more passata if desired.
  5. Bake for 20-25 minutes until golden and bubbling. Let rest for 5 minutes, garnish with fresh basil, and serve.

You can customize the seasonings to taste.
