Description
A rich and creamy spinach casserole made with fresh spinach, Parmesan cheese, and a touch of garlic, baked to golden perfection. Perfect as a side dish or a light main course.
Ingredients
- 2 tablespoons butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 20 oz fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 4 oz cream cheese, softened
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/2 cup panko breadcrumbs
- 2 tablespoons melted butter (for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, melt 2 tablespoons butter over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute.
- Add fresh spinach to the skillet in batches, cooking until wilted. Drain any excess liquid from the skillet.
- Reduce heat to low. Stir in heavy cream, Parmesan cheese, cream cheese, and nutmeg. Cook until cream cheese is melted and mixture is creamy. Season with salt and pepper.
- Transfer the spinach mixture to a greased 9×9-inch baking dish.
- In a small bowl, combine panko breadcrumbs with 2 tablespoons melted butter. Sprinkle evenly over the casserole.
- Bake for 20-25 minutes, until bubbly and top is golden brown. Let cool for 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes.
