Description

A rich and creamy spinach casserole made with fresh spinach, Parmesan cheese, and a touch of garlic, baked to golden perfection. Perfect as a side dish or a light main course.


Ingredients

  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 20 oz fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter (for topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt 2 tablespoons butter over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute.
  3. Add fresh spinach to the skillet in batches, cooking until wilted. Drain any excess liquid from the skillet.
  4. Reduce heat to low. Stir in heavy cream, Parmesan cheese, cream cheese, and nutmeg. Cook until cream cheese is melted and mixture is creamy. Season with salt and pepper.
  5. Transfer the spinach mixture to a greased 9×9-inch baking dish.
  6. In a small bowl, combine panko breadcrumbs with 2 tablespoons melted butter. Sprinkle evenly over the casserole.
  7. Bake for 20-25 minutes, until bubbly and top is golden brown. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes.
