Description

Savory meatballs loaded with spinach and garlic, with a gooey mozzarella center. Perfect as an appetizer or main dish.


Ingredients

  • 1 lb ground beef
  • 1 cup chopped spinach (thawed if frozen, squeezed dry)
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 4 oz fresh mozzarella, cut into 12 small cubes


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, Parmesan, egg, salt, pepper, and red pepper flakes. Mix until well combined.
  3. Divide the mixture into 12 equal portions. Flatten each portion, place one mozzarella cube in the center, and shape into a meatball, sealing the cheese inside.
  4. Place the stuffed meatballs on the prepared baking sheet. Bake for 18-20 minutes, until cooked through and lightly browned.
  5. Let rest for 5 minutes before serving. Serve with marinara sauce if desired.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of dried oregano or basil to the meat mixture.
