Description

Juicy meatballs infused with spinach and garlic, stuffed with gooey mozzarella cheese, and baked to perfection. A delicious twist on classic meatballs that’s perfect for dinner or parties.

Ingredients

  • 1 lb ground beef
  • 1 cup frozen spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 oz mozzarella cheese, cut into small cubes
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan, egg, salt, and pepper. Mix until well incorporated.
  3. Take a small amount of the meat mixture and flatten it in your hand. Place a mozzarella cube in the center, then shape the meat around it to form a ball, ensuring the cheese is completely enclosed. Repeat with remaining mixture and cheese.
  4. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, about 2-3 minutes per side. They don't need to be cooked through at this point.
  5. Transfer the browned meatballs to the prepared baking sheet. Bake for 15-20 minutes, or until cooked through and the cheese is melted.
  6. Serve hot with your favorite sauce or alone.

Notes

You can customize the seasonings to taste. Try adding Italian herbs or red pepper flakes for extra flavor.
