Description
These festive puff pastry Christmas trees are filled with a savory blend of spinach, feta, and sweet dried cranberries. Perfect as a holiday appetizer or party snack, they are easy to make and impressively delicious.
Ingredients
- 2 sheets puff pastry, thawed
- 10 oz frozen spinach, thawed and squeezed dry
- 1 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft, about 3 minutes. Add spinach and cook for another 2 minutes. Remove from heat and stir in feta, cranberries, salt, and pepper. Let cool slightly.
- On a lightly floured surface, roll out one puff pastry sheet into a 10×10-inch square. Spread the spinach mixture evenly over the pastry, leaving a 1/2-inch border. Brush edges with beaten egg. Top with the second puff pastry sheet, pressing edges to seal.
- Using a sharp knife or pizza cutter, cut the pastry into strips about 1 inch wide, then cut each strip into tree shapes using a tree-shaped cookie cutter or by cutting triangles. Alternatively, cut the pastry into tree shapes with a cookie cutter before filling. If using cookie cutter, place half the trees on baking sheet, add filling, top with another tree, and seal edges with a fork.
- Place trees on prepared baking sheet. Brush tops with beaten egg. If desired, cut a small star shape from extra pastry and place on top of each tree.
- Bake for 15-20 minutes, or until golden brown and puffed. Serve warm.
