Description
Juicy chicken breasts are filled with a creamy spinach and cream cheese mixture, then baked to golden perfection. This dish is elegant enough for a dinner party but simple enough for a weeknight meal.
Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine the softened cream cheese, chopped spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well blended.
- Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the cream cheese mixture, dividing it evenly. Secure the openings with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown.
- Pour the chicken broth into the skillet around the chicken breasts.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
- Remove toothpicks before serving. Let rest for 5 minutes and serve with pan juices.
Notes
You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat, or swap the mozzarella for provolone or Swiss cheese.
