Description

Juicy chicken breasts filled with a creamy spinach and cream cheese mixture, then baked to golden perfection. This easy, low-carb dinner is both elegant and comforting, perfect for a weeknight or a special occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a medium bowl, combine cream cheese, spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well blended.
  3. Slice a pocket into each chicken breast horizontally, being careful not to cut all the way through. Stuff each breast with an equal amount of the cream cheese mixture and press the edges together to seal. If needed, secure with toothpicks.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown.
  5. Transfer the skillet to the preheated oven (or place the seared chicken into the prepared baking dish) and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from oven, let rest for 5 minutes, then garnish with paprika if desired. Serve warm.

Notes

You can customize the seasonings to taste. For extra flavor, add sun-dried tomatoes or artichoke hearts to the cream cheese mixture. Use toothpicks to secure the chicken if the filling starts to leak.
