Description

Juicy chicken breasts are filled with a creamy mixture of spinach, cream cheese, and savory seasonings, then baked to perfection. This elegant yet easy dish is perfect for a weeknight dinner or a special occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish lightly with olive oil or cooking spray.
  2. In a medium bowl, combine cream cheese, chopped spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper until well mixed.
  3. Cut a pocket into each chicken breast horizontally, being careful not to cut all the way through. Stuff each breast evenly with the spinach-cream cheese mixture. Secure the openings with toothpicks if needed.
  4. Season the outside of the chicken breasts with additional salt and pepper.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until golden brown.
  6. Pour chicken broth into the skillet around the chicken. Transfer the skillet to the preheated oven.
  7. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the filling is hot and bubbly.
  8. Remove from oven, let rest for 5 minutes, then serve with your favorite sides.

Notes

You can customize the seasonings to taste. For extra flavor, add a sprinkle of red pepper flakes or use fresh herbs instead of dried. You can also use low-fat cream cheese for a lighter version.
