Description
A quick and hearty one-pan dish featuring tender spinach and creamy white beans, perfect as a main or side.
Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1/4 cup vegetable broth
- 5 ounces fresh baby spinach
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
- Add the drained white beans and vegetable broth. Stir and cook for 2–3 minutes until heated through.
- Add the spinach in handfuls, stirring until wilted, about 2–3 minutes.
- Season with salt, black pepper, and red pepper flakes if using. Cook for another minute.
- Remove from heat. Sprinkle with Parmesan cheese if desired. Serve warm.
