Description

A quick, healthy, and savory side dish featuring tender spinach and creamy white beans, sautéed with garlic and a hint of lemon. Perfect for a simple weeknight meal.


Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 10 ounces fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  2. Add the cannellini beans and cook for 2–3 minutes, stirring occasionally.
  3. Add the fresh spinach in handfuls, stirring until wilted. Continue adding all the spinach.
  4. Season with red pepper flakes, salt, and black pepper. Cook for another 2 minutes.
  5. Remove from heat and stir in lemon juice. Serve warm.

Notes

You can customize the seasonings to taste. For extra protein, add cooked chicken or tofu.
