A quick, healthy, and savory side dish featuring tender spinach and creamy white beans, sautéed with garlic and a hint of lemon. Perfect for a simple weeknight meal.
Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 10 ounces fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Add the cannellini beans and cook for 2–3 minutes, stirring occasionally.
- Add the fresh spinach in handfuls, stirring until wilted. Continue adding all the spinach.
- Season with red pepper flakes, salt, and black pepper. Cook for another 2 minutes.
- Remove from heat and stir in lemon juice. Serve warm.
Notes
You can customize the seasonings to taste. For extra protein, add cooked chicken or tofu.
