Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, diced
- 1 (15-ounce) can white beans, drained and rinsed
- 6 cups fresh spinach
- 1/2 cup vegetable broth
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Red pepper flakes (optional)
- Lemon wedges for serving
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the white beans, vegetable broth, oregano, salt, pepper, and red pepper flakes if using. Simmer for 5 minutes to allow flavors to meld.
- Add the fresh spinach in batches, stirring until wilted and combined with the beans, about 3-4 minutes.
- Taste and adjust seasoning as needed. Serve warm with a squeeze of fresh lemon juice.
