Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup cooked quinoa or rice
- 1 cup prepared hummus
- 1 large cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- In a small bowl, mix minced garlic, smoked paprika, cayenne, cumin, salt, pepper, and olive oil to create a paste. Coat chicken breasts evenly with the paste and let marinate for at least 15 minutes.
- Grill or pan-sear the chicken over medium-high heat for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- In a separate bowl, combine diced cucumber, cherry tomatoes, lemon juice, and parsley. Toss to make the cucumber salad.
- To serve, divide cooked quinoa or rice among bowls. Top with sliced chicken, a generous dollop of hummus, and the cucumber salad.
Notes
You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes or a chopped jalapeno to the marinade.
