Description

A fiery and flavorful bowl featuring spicy garlic marinated chicken, creamy hummus, and a refreshing cucumber salad. Perfect for a quick and satisfying dinner.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup cooked quinoa or rice
  • 1 cup prepared hummus
  • 1 large cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. In a small bowl, mix minced garlic, smoked paprika, cayenne, cumin, salt, pepper, and olive oil to create a paste. Coat chicken breasts evenly with the paste and let marinate for at least 15 minutes.
  2. Grill or pan-sear the chicken over medium-high heat for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
  3. In a separate bowl, combine diced cucumber, cherry tomatoes, lemon juice, and parsley. Toss to make the cucumber salad.
  4. To serve, divide cooked quinoa or rice among bowls. Top with sliced chicken, a generous dollop of hummus, and the cucumber salad.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of red pepper flakes or a chopped jalapeno to the marinade.
