Description
A zesty and satisfying bowl featuring tender chicken marinated in spicy garlic sauce, served over fluffy rice with creamy hummus and a refreshing cucumber salad.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (adjust for heat)
- 1 tsp ground cumin
- Salt and black pepper to taste
- 1 cup cooked basmati rice
- 1 cup store-bought or homemade hummus
- 1 large cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 2 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- Lemon wedges for serving
Instructions
- In a bowl, combine chicken pieces with olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Toss to coat evenly and let marinate for at least 10 minutes.
- Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
- While the chicken cooks, prepare the cucumber salad by combining sliced cucumber, red onion, lemon juice, and parsley in a bowl. Toss gently and season with salt to taste.
- To assemble the bowls, divide the cooked rice among four bowls. Top each with a scoop of hummus, a portion of the spicy garlic chicken, and a generous serving of cucumber salad.
- Garnish with extra parsley and serve immediately with lemon wedges on the side.
