Description

A zesty and satisfying bowl featuring tender chicken marinated in spicy garlic sauce, served over fluffy rice with creamy hummus and a refreshing cucumber salad.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust for heat)
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup cooked basmati rice
  • 1 cup store-bought or homemade hummus
  • 1 large cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Lemon wedges for serving


Instructions

  1. In a bowl, combine chicken pieces with olive oil, minced garlic, smoked paprika, cayenne pepper, cumin, salt, and black pepper. Toss to coat evenly and let marinate for at least 10 minutes.
  2. Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
  3. While the chicken cooks, prepare the cucumber salad by combining sliced cucumber, red onion, lemon juice, and parsley in a bowl. Toss gently and season with salt to taste.
  4. To assemble the bowls, divide the cooked rice among four bowls. Top each with a scoop of hummus, a portion of the spicy garlic chicken, and a generous serving of cucumber salad.
  5. Garnish with extra parsley and serve immediately with lemon wedges on the side.
