Description

A vibrant and flavorful bowl featuring tender, spicy garlic-marinated chicken served over a bed of hummus and a refreshing cucumber salad, perfect for a quick and healthy meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust for heat)
  • 1 tsp ground cumin
  • Salt and black pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1 large cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Cooked rice or quinoa for serving (optional)


Instructions

  1. In a bowl, combine chicken strips with 2 tbsp olive oil, minced garlic, paprika, cayenne, cumin, salt, and black pepper. Marinate for at least 15 minutes.
  2. Heat the remaining 1 tbsp olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until fully cooked and slightly charred.
  3. While the chicken cooks, prepare the cucumber salad by combining cucumber slices, red onion, parsley, and lemon juice in a bowl. Toss gently and season with salt.
  4. To assemble, spread hummus evenly at the bottom of each serving bowl. Top with cooked chicken and a generous portion of cucumber salad. Serve with rice or quinoa if desired.
