Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked white rice or quinoa
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine minced garlic, olive oil, smoked paprika, cayenne, cumin, salt, and black pepper to make a marinade. Add chicken pieces and toss to coat evenly. Let marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until golden and cooked through. Remove from heat.
- In a separate bowl, combine diced cucumber, red onion, lemon juice, parsley, extra-virgin olive oil, and salt and pepper. Toss well to make the cucumber salad.
- To assemble bowls, divide cooked rice or quinoa among 4 bowls. Top each with a portion of the spicy garlic chicken, a scoop of hummus, and a generous amount of cucumber salad.
- Serve immediately, optionally garnished with extra parsley or a drizzle of olive oil.
Notes
You can customize the seasonings to taste. For extra heat, add more cayenne or a drizzle of hot sauce before serving.
