Description

A vibrant and satisfying bowl featuring juicy chicken marinated in spicy garlic, served over fluffy rice with creamy hummus and a refreshing cucumber salad. Perfect for a balanced and flavorful weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice or quinoa
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon extra-virgin olive oil
  • Salt and pepper to taste


Instructions

  1. In a bowl, combine minced garlic, olive oil, smoked paprika, cayenne, cumin, salt, and black pepper to make a marinade. Add chicken pieces and toss to coat evenly. Let marinate for at least 15 minutes.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until golden and cooked through. Remove from heat.
  3. In a separate bowl, combine diced cucumber, red onion, lemon juice, parsley, extra-virgin olive oil, and salt and pepper. Toss well to make the cucumber salad.
  4. To assemble bowls, divide cooked rice or quinoa among 4 bowls. Top each with a portion of the spicy garlic chicken, a scoop of hummus, and a generous amount of cucumber salad.
  5. Serve immediately, optionally garnished with extra parsley or a drizzle of olive oil.

Notes

You can customize the seasonings to taste. For extra heat, add more cayenne or a drizzle of hot sauce before serving.
