Ingredients
- For the Chicken:
- 1 lb chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For the Cucumber Salad:
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- For the Bowls:
- 2 cups cooked rice (or quinoa)
- 1 cup hummus
- Fresh parsley for garnish
Instructions
- In a bowl, combine chicken pieces with garlic, olive oil, smoked paprika, cayenne, cumin, salt, and pepper. Mix well to coat. Let marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat. Add marinated chicken in a single layer. Cook for 5-7 minutes, stirring occasionally, until chicken is cooked through and slightly charred. Remove from heat.
- In a separate bowl, combine cucumber, red onion, dill, lemon juice, olive oil, salt, and pepper. Stir to combine. Set aside.
- To assemble bowls, divide cooked rice among four bowls. Top with cooked chicken, a generous scoop of hummus, and a side of cucumber salad.
- Garnish with fresh parsley before serving.
Notes
You can customize the seasonings to taste. For extra heat, add more cayenne or a pinch of chili flakes. For a low-carb option, serve over cauliflower rice.
