Description

A vibrant and zesty salad featuring succulent shrimp coated in spicy Cajun seasoning, creamy avocado, and a tangy lime dressing. Perfect for a light yet satisfying meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil, divided
  • 2 ripe avocados, diced
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons mayonnaise
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. In a bowl, toss the shrimp with Cajun seasoning and 1 tablespoon of olive oil until evenly coated.
  2. Heat the remaining olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and opaque. Remove from heat and set aside.
  3. In a small bowl, whisk together lime juice, mayonnaise, honey, salt, and pepper to make the dressing.
  4. In a large salad bowl, combine salad greens, avocado, cherry tomatoes, red onion, and cilantro. Drizzle with the dressing and toss gently to coat.
  5. Top the salad with the cooked shrimp and serve immediately.
