A vibrant and zesty salad featuring succulent shrimp coated in spicy Cajun seasoning, creamy avocado, and a tangy lime dressing. Perfect for a light yet satisfying meal.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil, divided
- 2 ripe avocados, diced
- 4 cups mixed salad greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons mayonnaise
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with Cajun seasoning and 1 tablespoon of olive oil until evenly coated.
- Heat the remaining olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, until pink and opaque. Remove from heat and set aside.
- In a small bowl, whisk together lime juice, mayonnaise, honey, salt, and pepper to make the dressing.
- In a large salad bowl, combine salad greens, avocado, cherry tomatoes, red onion, and cilantro. Drizzle with the dressing and toss gently to coat.
- Top the salad with the cooked shrimp and serve immediately.
