Description
A creamy, tangy pasta dish with fresh spinach and rich sun-dried tomatoes, perfect for a quick weeknight dinner.
Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 4 cups fresh spinach
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook spaghetti according to package directions until al dente. Drain, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
- Stir in sun-dried tomatoes and cook for 2 minutes. Pour in heavy cream and bring to a simmer.
- Add Parmesan cheese and stir until melted. Season with salt, pepper, and red pepper flakes if using.
- Add fresh spinach and cook, stirring, until wilted, about 2 minutes.
- Toss cooked spaghetti with the sauce, adding reserved pasta water a little at a time if needed for consistency. Serve immediately.
