Description

A creamy, savory pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach tossed with spaghetti in a rich cream sauce.


Ingredients

  • 8 oz spaghetti
  • 2 boneless skinless chicken breasts, sliced thin
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and set aside.
  2. Season chicken slices with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook chicken until golden and cooked through, about 4-5 minutes per side. Remove chicken from skillet and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and sun-dried tomatoes, sautéing for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted and smooth. Add fresh spinach and cook until wilted, about 2 minutes.
  6. Return chicken to the skillet and add cooked spaghetti. Toss everything together until well coated in the sauce. Adjust seasoning with salt, pepper, and optional red pepper flakes.
  7. Serve immediately.
